MIX ALL INGREDIENTS TOGETHER.
STORE IN A AIRTIGHT CONTAINER AND ARE ALL REDY TO EAT AS SOON AS YOU LIKE

2 CUPS CRISPY CASHEWS
1/2 CUP DRIED PAYAYA CUT INTO SMALL PIECES
1/2 CUP DRIED PINEAPPLE CUT INTO SMALL PLECES
I CUP LARGE FLAKED DRIED UNSWEETENED COCONUT

Hot Curry Omelet

An easy and very tasty omelet

INGREDIENTS

1 tablespoon light sesame oil
1/2 teaspoon minced garlic
2 tablespoons minced onion
2 tablespoons thinly sliced green onion
1/4 cup diced red bell pepper
1/4 teaspoon salt
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
2 eggs, beaten

DIRECTIONS

Heat sesame oil in a skillet over medium heat. Stir in the garlic, and cook for 20 seconds until fragrant, then stir in the onion, green onion, bell pepper, and salt. Cook for a minute or two until the vegetables soften. Sprinkle with coriander, cumin, and turmeric; cook for 30 seconds until fragrant.

Spread the vegetables evenly over the bottom of the skillet. Pour in egg, and cook gently until set, then turn over, and cook for an addition 30 seconds to firm. Roll omelet onto a plate to serve.

Chicken Foster

INGREDIENTS

1/2 cup butter
6 tablespoons brown sugar
1 pound skinless, boneless chicken breast halves – cut into 1 inch cubes
salt and pepper to taste
1/4 cup all-purpose flour
2 small bananas, sliced
2 (1.5 fluid ounce) jiggers amaretto liqueur
3/4 cup coconut-flavored rum

DIRECTIONS

Melt the butter in a large skillet over medium heat, and stir in the brown sugar. Season the chicken with salt and pepper, and toss with flour to coat. Add chicken and bananas to the skillet, and cook stirring occasionally until chicken is almost cooked through. Stir in the amaretto and rum, and heat through. Remove from the burner, and use a long match or lighter to flambe. Allow to burn until the alcohol cooks off and the flame goes out. Serve and enjoy!
